Pineapple Curry

This curry paste is made with delicious fresh spices in an easy way. Pineapple is a great way to add a digestive enzyme to help with your gut health and also balance the sharpness of the curry (you can choose the amount of chili). Coconut cream and a little bit of tomato paste gives is nice velvet smoothness and beautiful rich color. Serves : 4 medium portions

 

Ingredients For the curry paste

  • 1 medium chilli – with or without seeds
  • 4 cloves of garlic
  • 3 shallots
  • 50 g coriander stalks (handful) 
  • 1 tsp cinnamon
  • 1tsp turmeric

Ingredients For curry

  • 250 ml cream or full fat coconut milk
  • 2 tbsp tomato paste
  • Vegetables: cooked chickpeas, sweet potatoes (diced and cooked),
  • 100g – fresh pineapple triangles
  1. Make a paste by mixing everything well by had blender or in a food processor
  2. Add paste to a pan and fry (around 10min), add tomato paste and fry for another 2/3 min, add coconut milk and mix well. 
  3. Add chopped vegetables (you can add pineapples here if you want to)
  4. Heat Up - and serve with mixed rice and serving of steamed green vegetables.
